Amy: You’re a George Martin Group veteran. How did you come to be GM at Grillfire Arundel?
Matt: I've worked for the George Martin Group for twelve years now. I started as a food runner when I was 18 at Max's in Rockville Centre. I have since worked my way up and I have opened 5 restaurants in the group. I am currently the General Manager of Grillfire Arundel in Hanover, MD. I have also been responsible for running the beverage program for 5 different restaurants in the group.
Amy:
What has it been like getting Grillfire Arundel up and running?
Matt:
It has been a great experience opening Grillfire Arundel. It has been a lot of hard work but also very rewarding. It is great to see a restaurant be built from the ground up, literally. This restaurant is also a first for the group in that it is located in a new boutique hotel called The Hotel at the Arundel Preserve.
Amy:
How else is Grillfire Arundel different than other George Martin restaurants?
Matt:
Grillfire Arundel is the true embodiment of t
he Grillfire concept. We have a beautiful design, a great menu and our service is going to be top notch. We are serving breakfast, lunch, dinner and room service.
Amy:
So what exactly is the Grillfire concept?
Matt:
We're an upscale casual American grill that has something for everyone. It’s a place people can bring their family's multiple times a week, a place to hang out with friends or to go on a first date.
Amy:
What’s your all-time favorite menu item?
Matt:
That’s easy -- the skirt steak, steak and shrimp com
bo. We have a great soy molasses marinade and the coconut shrimp is simply excellent.
Amy:
Sounds delish. What’s your go-to drink to wash down your shrimp and steak?
Matt:
The Pomegranate Collins. It’s one of those drinks that tastes so good you don’t realize it’s alcoholic. It’s a summer-time drink, light and refreshing.
