Grillfire has scheduled a late July opening for its inaugural Maryland location at The Town Center at Arundel Preserve in Anne Arundel County.

Known as the sophisticated American Grill, George Martin's Grillfire is contained within The Hotel at Arundel Preserve, a 150-room full-service hotel that is set to become operational on July 28.

The Town Center at Arundel Preserve, a mixed-use community near the intersection of Arundel Mills Blvd. and MD Route 295, features a residential component with 242 ultra-luxury apartment homes, more than 18,000 square feet of complementary retail space, and the hotel, which also includes more than 10,000 square feet of indoor/outdoor meeting space.

Vienna, VA-based Southern Management Corporation, a residential and commercial real estate company, is developing The Town Center at Arundel Preserve.

The sixth restaurant of the New York-based George Martin Group, Grillfire Arundel features natural elements such as brick, stone and polished mahogany. It was designed to appeal to businesspeople looking for breakfast, lunch or dinner or visitors looking for nightlife. In addition to steakhouse favorites, the menu will also include a variety of chicken and seafood dishes, salads and sandwiches.

Frank Greco, a graduate of the New York Institute of Technology and part of the George Martin Group since 1989, is the Executive Chef.

This Friday July 15th, 2011 George Martin's Strip Steak will have live music at 7pm. Strip Steak will be featuring local Pianist, Garret.

This Saturday July 16th, 2011 Strip Steak will be in full support of the Long Island Philharmonic playing at the Heckscher State Park. The show start's at 8pm at Heckscher State Park. In dedication to salute our veterans, there will be a firework show. Strip Steak will be extending our Happy Hour on Saturday for this event. Happy Hour will begin Pre-show from 5pm-8pm and then post show from 10pm-12am.

On Saturday evening, July 16th, 2011 the Islip Arts Council turns Hecksher State Park in East Islip, Long Island into a giant "Concert Hall." The Salute, in honor of our returning Veterans and those serving in Iraq and Afghanistan, features the Long Island Philharmonic. The event is capped by a spectacular fireworks display.

This is a free event for everyone made possible through the generosity of businesses, individual, foundations and government entities. 

  

5 Minutes With Executive Chef Frank Greco

The George Martin Group restaurant locations are known for their creative, unique, and cutting edge experience. Each menu dish is constantly updated and freshly prepared for our customers. Frank Greco is the Executive Chef for all George Martin Group restaurants. He is mastermind chef behind the creative and original recipes each George Martin Group Location has to offer. We took a few minutes to sit down with Frank and find out where his passion comes from. Below is the interview:

Amy: What is your inspiration behind the new Grillfire Arundel menu?

Frank: We take classic, comforting dishes and put our own spin on them. For instance, the short ribs are a classic take on pot roast but we serve it with truffled mashed potatoes to elevate it a little bit. 

Amy: So what's one item on the menu that people might not be familiar with-but should definitely try?

Frank: Our crusted Crab Munchkins. In Maryland they're no strangers to crab cake, but we make it into a "meatball" and crust it with coconut. It's a hybrid of crab-cake and coconut shrimp.

Amy: Wow, sounds tasty! What's one thing you'll never see on your menu?

Frank: Anything pre-made, or processed stuff. If we can't make it in-house, we don't do it.

Amy: Do you cater to people with special diets, like vegetarians?

Frank: We always work with vegetarians-my wife is a vegetarian so I would get in trouble if we didn't! We have a veggie burger on the menu and some vegetarian-friendly pasta items. If you have other issues, like gluten intolerance, we can also work with you.

Amy: How are you incorporating Maryland/local flavor into the new location?

Frank: I'm in the process of finding some local farms and vendors, to get access to more local produce and seafood. We'll work that into the daily specials.

Amy: What's the biggest task in front of you now, with the new Grilfire Arundel?

Frank: The biggest challenge of any restaurant is getting the right staff together in the kitchen, who can work together. We look for a family-like team. It's not just talent. You also need the right chemistry.

Amy: I know you're hiring. What do you look for?

Frank: I look for people that are just generally good people, people that you want to be around. They also have to be creative and want to strive to be better.

Amy: General Manager Matthew Santeramo has been with George Martin for 18 years, and you've been with the group since '89. That's pretty unusual!

Frank: Yes, I started with them out of culinary school, first as a saute cook, then sous chef and then executive chef at the original Grillfire. I have restaurants on Long Island where everyone started with me as a prep cook or dishwasher and a lot of them have been there for almost 20 years. People move up the ranks with us.

The George Martin Group restaurant, George Martin The Original, is known for it's upscale dining and delicious entree's, but not many customers know the quality and expectations required of the staff. Recently, George Martin The Original received a letter from a customer who hosted an Anniversary Party at the location and was "WOW'd" beyond belief. Read more below:

Dear George Martin Group:

I recently held my parents' Wedding Anniversary Party in the party room at your restaurant. The party was such a success that I had to write you a letter to express my gratitude. I have eaten dinner in your restaurant several times before and have had many servers but on one recent visit I was especially impressed with the service of Jess M. I specifically requested her to serve at the party and she did a terrific job. She was extremely accommodating with all of my requests on the night of the event. She has a great personality and is extremely respectful of the guest in your establishment. I am sure that you have heard what a wonderful employee she is but I had to let you know.

I especially want to thank you for the work done by your Restaurant Manager, Cheryl Sullivan. I came into the restaurant several months before the party and spoke with Cheryl. From the moment I sat down with her to discuss my expectations, I could tell that this was a person with whom I wanted to do business. She is a spectacular representation of your establishment. She does her job with professionalism, organization, and respect for the customer. In addition to all this, she and I share the same birthday, imagine that.

Over the past few months Cheryl and I would discuss the party. I had many different questions and concerns but she always took time out to make me feel comfortable. It is this finesse that makes doing business with George Martin a pleasure. She too time to go over my options, discuss pricing, and make suggestions that would make the event a success. The party was not only a success but we received calls from family and friends several days after the event and got compliments on the food, the service, and the atmosphere. 

My expectations were not only met but they were surpassed. I believe that Cheryl Sullivan was the main reason we have such a beautiful memory to keep. When I think back at the other restaurant options I was considering, I realize that my "gut" instinct with Cheryl Sullivan and George Martin Restaurant were exactly on target. Thank you very much and I look forward to returning to your restaurant very soon.
